Turkey Gumbo

Simmer the turkey to make stock.

Equal parts oil and flour. Cook slowly until dark brown. Add onion, green pepper, celery. When cooked, add some cubed pork sausage. Add broth. Cook for two hours. Cool; remove fat. Reheat; add turkey; sprinkle with chopped green onions before serving. (Can also make file powder available -- it's sassafras.)
